- 200 grams spelt flour
- 1/2 cup coconut sugar
- Tsp baking powder
- Tbsp cacao powder
- Tsp vanilla extract
- 60 gram coconut oil (room temp)
- 1/2 cup warm water
For the filling:
- 200 gram jar of Rusty’s cacao coconut almond butter (but you can really use any)
- 40 grams of spelt flour
In a small bowl, mix the nut butter and the flour until you get an even mixture and put aside.
To make the dough:
In a deep bowl, mix all the ingredients together until the dough is mixed evenly. If the dough feels a bit hard and not elastic, add another tablespoon of warm water and keep kneading until the dough has an even texture.
Using a rolling pin, roll out the dough, and with a glass or a cookie cutter, make circles from the dough.
Place a spoon of the filling in the center of the filling and fold into the shape of the hamantaschen.
Bake on medium heat (170 degrees) for about 15 minutes
